Gather Ingredients.
To make the LemonTop Gin Pancakes, you will need some supplies and ingredients. You’ll need all-purpose flour, baking powder, sugar, salt, vegetable oil or melted butter, eggs, milk and of course LemonTop Gin! You can also use a non-alcoholic version of LemonTop Gin if desired. Mix these together for the perfect flavour with a kick!
Whisk together Flour and Other Dry Ingredients.
In a bowl, whisk together the flour, baking powder, sugar and salt. Make sure to break apart clumps with a fork so that the ingredients are evenly distributed. Next, add in your oil or butter and stir until it’s fully combined with the dry ingredients. Finally, your LemonTop Gin of choice gives the delicious pancakes an extra kick of flavour! Whisk everything together until everything is incorporated and there are no lumps left in the batter.
Slowly Stir in the Wet Ingredients and Gin.
To start off your pancake batter, slowly pour in the wet ingredients and gin. As you do so, gently stir the ingredients with a wooden spoon until everything is evenly distributed in the bowl. Don’t over-mix though or else your pancakes will turn out rubbery! Once everything is combined together and no major lumps remain, you’re good to go!
Melt Butter, Pour Batter into Hot Pans, and Flip When Ready.
To prepare these delicious pancakes, preheat a non-stick pan over medium heat. Add a tablespoon of butter to the pan and let it melt while stirring the batter again. Make sure to distribute the gin evenly! Once everything is combined and the pan is hot enough, take a ¼ cup of your batter and pour it into the pan. Once bubbles start forming around the edge, you know it’s time to flip! Use a spatula or even a pair of tongs to carefully flip your pancake and cook on the other side until golden brown. Repeat this process with all of your remaining batters until all pancakes are cooked through!

Now for the fun part! Cream together 4 tbsp of melted butter and ½ shot of LemonTop Gin in a separate bowl.
